                                        Vinification and maturation: soft crushing with separation 
                                        of the must from the skins and must vinification. 
                                        Fermentation in steel vats at 18C and second fermentation 
                                        at 15C following the Classic Champenoise Method. Then 
                                        follow 24 months on their own yeast in bottle. 
                                        Alcoholic content: 13 
                                        Tasting notes: perlage is fine and abundant. Inviting nose 
                                        with overtones of bread crust, yeast and wild flowers. A note 
                                        of musk closes the bouquet. The taste gives sparkling fulfilling 
                                        sensations, soft, long lasting and well-balanced overall. 
                                        Food matches: perfect as an aperitif, it is at its very best 
                                        served with Parmesan cheese, San Daniele or Parma ham, cooked fish.
