                                        Vineyard: Rocca Sino-Il Roseto, comune di Castellinaldo 
                                        Vinification and maturation: after the grapes are crushed starts 
                                        the process of cold maceration on the skins - lasting around 
                                        24 hours – then they are softly pressed. Must fermentation at 
                                        18C in steel vats and second fermentation following the 
                                        Classic Champenoise Method at 15C.  
                                        Then follow 24 months on their own yeast in bottle 
                                        Alcoholic content: 13% Vol. 
                                        Tasting notes: it is immediately evident its lively, persistent and 
                                        creamy perlage. A delicate flavour showing flowery overtones to 
                                        which follow overripe fruits, vanilla, hazelnut and yeasts sensations.  
                                        Its soft elegance lingers long in the mouth. 
                                        The strong Nebbiolo tannins are softened by the balanced carbonic level. 
                                        Sweet herbs and balsamic notes are brought out.  
                                        Lingers on the palate, with a well-balanced, harmonious taste. 
                                        Food matches: aperitif wine, it is at its very best served with 
                                        Parmesan cheese or similar, San Daniele or Parma ham, raw fish.  
                                        Its perfect balance between delicacy and fullness make it 
                                        appropriate throughout a meal.
